Baked Pork Chops with Bread Filling

    This is a Mennonite dish that is a fall favorite of my family. It very well could be my son’s favorite meal….. certainly falls in the “comfort food” category.

    6-8 Pork chops (boneless)
    1 ½ cup Milk
    4- eggs
    4- Tablespoons butter
    Cheap white bread (better part of a loaf)
    ¼ cup diced onion
    a little dried parsley
    just a touch of thyme
    3-“pinches” of rubbed sage
    Salt/black pepper

    Place pork chops in a large rectangular glass baking dish. Season with salt and black pepper. Bake at 350 degrees for 15 minutes.

    Lightly beat eggs in a large bowl. Stir in milk. Tear off small pieces of the bread and stir into liquid. Add the onions when it starts to get a little thicker. Keep adding bread until it is the consistency of stuffing, this will take almost an entire loaf. Melt the butter, and add the seasonings. Pour the butter/seasonings over the bread mixture and stir in well. Add more bread if necessary.

    After the pork has baked for 15 minutes, spoon the bread filling over the pork chops. Spoon applesauce over the top of the bread filling to cover.

    Bake at 350 for an hour.
